Kinindate Usucha
- Hanto waits an appropriate amount of time to enter (until the hishaku drops is a good time), then shitsurei’s and nijiru’s in, stays in corner in hikae (knuckles on the ground)
- When tea is ready, hanto comes and sits in geza marudatami and picks up dai. Rather than scoot with it in hand, they place it in the final position, scoot themselves, and then pick up dai/turn/give to kinin/scoot back. Then they ichirei, hanto stands, takes two paces back, and returns to spot in the corner.
- A note, the geza marudatami is the one which dougu is handle on. Dougu is never placed on the kamiza marudatami.
- Also, if the server is from the host’s side (ie hanto), they always sit on the geza marudatami. If the server is from the guest’s side (ie tomo), they always sit on the kamiza marudatami.
- Kinin drinking manner
- Kinin brings the entire dai and bowl heriuchi center.
- Otemae chodai bow, with bowl right in front
- Take bowl only, kansha, turn, drink
- After finished drinking, wipe with fingers, turn back, place on dai (normal)
- Move dai herisoto, haiken
- Turn dai
- Haiken portion
- Same as with dai, hanto can just place the dougu in the correct spot instead of holding and turning
- Hanto goes directly back (ie not to corner, but to the hanjo next to the corner) so that teishu can exit freely. Can’t leave kinin alone though, so hanto stays in the room.
- Kinin brings all the dougu heriuchi, separating the fukusa from the chashaku.
- Haiken as normal, still on the geza marudatami.
- Move everything at the end to geza heriuchi (ie even after you finish viewing the chashaku, you should also move the fukusa directly to geza heriuchi). Then move everything herisoto.
- Hanto picks up, brings back to temaeza, then exits. Exiting should be nijiru with a shitsureishimashita at the end.
Kinindate Koicha
- Same as above for everything except the drinking portion
- Drinking portion
- Kinin brings bowl + dai heriuchi R
- Pick up bowl, kansha, turn
- Take one sip, ofukukagen
- Finish drinking, place heriuchi L
- Have tea + okashi conversation with teishu
- Move bowl back center, wipe, place on dai
- Move dai herisoto
- Haiken bowl
- Turn dai
Kinin Kiyotsugu Usucha
- I wrote the kinin kiyotsugu koicha section first, so tbh look at that for more detailed instruction. Same basic rules apply.
- Drinking procedure
- Same as kinindate usucha… mostly.
- Bowl and dai come heriuchi CENTER. Osaki-ni, oshoban (both while in center). Drink, wipe, haiken, etc.
- Tomo bowls, first tomo does oshoban while bowl is heriuchi CENTER. Otherwise it’s like normal.
Kinin Kiyotsugu Koicha
- Big difference between kinindate and kinin kiyotsugu is that the hanto role is fulfilled by the first and last tomo (depending on what needs to be done). However, where the hanto always sits on the geza marudatami, the tomo always sits on the kamiza marudatami.
- Dougu atsukai still occurs on the geza marudatami (while sitting on the kamiza marudatami)
- From getting dougu from temaeza to giving to kinin, tomo stands and walks to geza marudatami
- From geza marudatami, tomo can either scoot or walk, depends on their preference. Personally, I normally walk.
- In general, nothing is ever “truly” offered between kinin and tomo. Things designated for kinin are for kinin use only, and same for tomo (it would be beneath the kinin to accept something designated for a tomo, or so the explanation goes)
- Okashi
- So… okashi. An ongoing issue with kinin kiyotsugu koicha. For one thing, we almost never use the correct equipment — technically, a kinin shouldn’t be served from a regular fuchidaka, but rather from a fuchidaka/dai hybrid that has legs like a clawfoot bath. Most places don’t have that though, so we either use the takatsuki (intended for higashi) or a regular fuchidaka. For this discussion, let’s say we’re using the takatsuki.
- The bigger issue is what to do with the fuchidaka. Same as literally any time we ever do koicha, the fuchidaka technically shouldn’t even be in the room when temae is being done. In a chaji setting, the omogashi are always eaten before nakadachi, giving the host time to change the tokonoma and also bring in the fuchidaka. We get in a tizzy about it during kinin kiyotsugu though because the main point behind kinin kiyotsugu is to learn how to hanto, and one of the hanto’s duties is taking things away. So what to do. Well, anything that doesn’t involve eating the sweets before the temae starts is hataraki anyway. I like to have everyone start eating fairly early, maybe around the time the chaire shifuku is being opened. Last tomo collects the fuchidaka, takatsuki stays in front of the kinin. Fuchidaka can go to the door literally any time (or not at all), however for kinin, it’s good to minimize the amount of time you spend walking in front of them and meiwaku-ing. To that effect, you should try to couple your retrieval with a time you’re already visiting the kinin. You shouldn’t do it as you’re giving the first bowl to the kinin, because you need to be there for a sorei. It could happen when tomo bowl is given out, but the first tomo couldn’t do it (they need to drink right away). Last tomo could do it, but only if there are 3+ tomo (bc 2nd guest needs to be there for osaki ni). No matter what, it’s safe to get when you’re bringing haiken dougu to the kinin, also the tomo bowl haiken.
- Drinking procedure
- Teishu places kinin bowl + dai out in the standard spot
- First tomo walks over, picks up dai, stands, sits before kinin
- Sitting on kamiza marudatami, tomo turns the dai on the geza datami and gives to kinin
- Scoot back 2, ichirei
- Stand, walk back to seat
- Kinin brings bowl heriuchi CENTER. Sorei.
- Note: kinin does not put bowl to the left. That would imply that they’re offering the bowl to the tomo.
- Kinin moves dai right. Lift bowl only, kansha, one sip
- Ofukukagen → taihen kekkona nerikagen 39
- Note: At this point, teishu immediately begins on second bowl (ie leaving temaeza with kensui and bringing kaejawan from mizuya)
- Done drinking, place bowl directly on tatami in front of you and wipe. Turn bowl back, place on dai. Bring dai + bowl herisoto.
- Haiken
- Give dai + bowl to tomo for haiken
- Note: The specifics of how to do this are undecided. Just work together. We normally turn the bowl a quarter turn so shomen faces tomo, then place it to the far left heriuchi corner of the kinindatami (from kinin perspective).
- All tomo haiken, dai + bowl end up geza herisoto from the last guest.
- TODO or is it heriuchi? I think it’s herisoto bc it’s on a dai, but that might be one of those “this is a distinction we make between upper temae and kinin” things
- Teishu finishes 2nd bowl, places out for tomo
- First bowl haiken should have finished by now.
- If there is only one tomo, that tomo can bring the kinin bowl and exchange at temaeza.
- If there are two or more tomo, last tomo can bring the kinin bowl after the tomo bowl has been picked up. Just keep timing in mind — if there are only two tomo, the second tomo will have to immediately bow for osaki ni, so they can’t be up and moving. The first tomo could retrieve the bowl from the second tomo and take it up/exchange as well. Just do what fits the moment properly.
- Bowl is brought to tomo spot somehow. First tomo places bowl heriuchi CENTER and oshouban’s to the kinin. Then they move the bowl left and osaki-ni
- Note: this is not a sorei, this is only an osaki-ni. Same as kasanejawan. You only sorei once — all the proceeding bows are just osaki-ni’s.
- One sip, ofukukagen, then teishu turns, does their water stuff, then there is conversation about tea and sweets from imai
- TODO double check this
- Kinin asks last tomo for haiken once they’ve finished drinking. Last tomo brings bowl to kinin, they haiken, it comes back to last tomo.
- Last tomo can return the bowl at any time. Just make sure to do it smoothly.
- Haiken procedure
- Nothing special, just pass as normal. It can be rather far to pass from kinin to tomo, so just try to be cooperative. Kinin should put it in an easy place to get for tomo.
