This list holds for all Shikaden temae except for Satsubako, ie:
Satsubako is (basically) konarai!
Satsubako is an exception for all of these!
- No gyo no te for the door
- No “no abbreviations”
- No te wo suite
- Guests take haiken dougu when teishu stands with kensui
Number of sweets are contested. glenn says to serve two, because it’s a lot of tea. shimura says to just serve one sweet. Never three though.
Opening the door
Both hands down on the floor in gyo position when opening and closing the door, like taking Hibashi in Daisu.
- Both hands down in gyo.
- Open (or close) door, keeping one hand on the floor while the other is moving.
- Once open (or closed), return back to gyo, then rise.
Note: This only happens during the temae itself. During Sho-iri and during usucha, this does not happen.
No abbreviations
- Chasentoshi is 2x up for raku, 3x up for tenmoku (Raku-chawan vs Tenmoku-chawan) at beginning and end.
- Chashaku is wiped 3x at beginning and end
- Wamono chaire is purified for haiken with full yoho-sabaki and 3x doubuki
Note: Whether or not we wipe the bowl at the end is depending on the bowl type, not the temae.
Te wo tsuite
It is done here for all haiken objects, including wamono chaire in Daitenmoku.
When should guests taking haiken dougu
When host stands with chawan. Versus Konarai (when standing with kensui) and Okuden + Betsuden (when standing with mizu).
