Mountains

  • Make Uiro, split batch into two. Color half light blue.
  • Smoosh and blend the hotdogs, then roll out.
    • Be really good at smooshing! This one ended up horrible and split down the middle.
    • Dimensions
      • One strip is 14cm long. 8cm blue, 6cm white.
      • Width was tbd. 4.5cm width was best. 4.25cm was also okay, but a little small.
  • Cut strips.
    • Note: Using the bench scraper and pressing down left thin white fringes on the edges, which look bad. Using a knife was better, but the knife also left some fringes.
  • Place the shiro-an (20g) on the lowermost portion of the strip, then roll up.
  • Cut a mountain shape into the top with a knife
  • Wet the inside of the mountain, then roll up.
    • Be careful not to wet all the way up to the edge, otherwise it will bleed out and a wet spot will appear on the background.

Things to try for next time (as of 2025-01-17):

  • Slightly bigger ball of anko (25g). It’s nice when the anko is rolled out a little longer and fills the width of the strip, but it’s easy for the cylinder to end up too narrow overall. More shiroan = better proportions?
  • Score the hotdogs before smooshing. Also, make sure they aren’t too wet before smooshing. Better bonding.
  • Maybe use a pizza cutter instead of a knife or bench scraper?
