  • Tou: Koicha
  • Hanto: Usucha

Procedure:

  • The three guests enter as in Hira Kagetsu.
    • Bow at the door with sensu before entering.
  • Tou enters.
    • Sit first at sadoguchi (no sensu).
    • Enter, sit and bow at diagonal in fumikomi, then stand to walk to seat.
    • Seat is kitty-corner from 3rd guest, solo on tatami (outside 4.5-mat space).
  • Hanto brings kadai.
    • Sit at sadoguchi with kadai in front.
    • Once tou sits, enter with kadai and bring to tokonoma.
      • Sit at hanaire-shomen, but place kadai geza. (It ends up to the side of your body, not front).
    • Turn slightly away from tokonoma toward guests, then leave for mizuya.
  • Tou asks jikyaku to do hana.
  • Jikyaku stands, leaving their sensu, and does hana.
    • Walk to tokonoma.
    • Before doing anything else, haiken the hanaire.
    • Arrange the flowers in-hand, then place in the hanaire.
    • Tou asks jikyaku to add water, which the jikyaku actually does.
      • Mizutsugi held in R, chakin supporting base of spout with L.
    • Jikyaku returns the mizutsugi, fixes the flowers on the kadai, and turns the knife such that the sharp side faces away from the flowers on the kadai.
    • Jikyaku returns to their seat.
  • Hanto brings in sumitori, takes out kadai.
    • Enter with sumitori, placing as usual for sumidemae in temaeza.
    • Exit temaeza, then turning around at the fumikomi, walk to tokonoma.
    • Haiken the hanaire, then exit with the kadai to mizuya.
  • Hanto brings in the haiki, kami-kamashiki, and fukusa.
    • Return from the mizuya, placing haiki in upper-L corner of fumikomi.
    • Taking kami-kamashiki from kaichu (?), place to R of haiki.
    • Fukusa sou-sabaki, then place atop kami-kamashiki.
  • Tou asks sankyaku to do sumi.
  • Sankyaku does sumi.
    • Exit their spot, entering temaeza from the fumikomi.
    • Sit on upper fumikomi. Koshi fukusa, place kami-kamashiki in kaichu. Take haiki in R, then stand and enter temaeza.
    • Do shozumi as usual, omitting kogo.
      • Note: in ro, tou will haiken the charcoal laying along with the guests.
    • Exit with haiki, returning everything (including fukusa) back to how it was in the upper-L corner of fumikomi.
    • Return to seat.
  • Hanto returns sumi dougu to mizuya.
    • First, return fukusa to obi, then take kami-kamashiki and haiki to mizuya.
      • Q: How do they walk here? Turn around, or back out?
    • Return, and take sumitori to mizuya.
    • Place the kou-bon in front to be ready.
    • (Kyaku haiken the sumi at this time in furo).
  • Hanto turns kou-bon at sadoguchi, brings to shokyaku. Next, hanto places chaire on floor (already displayed on tana) for koicha.
  • Tou asks shokyaku to do kou.
    • Prepare kou:
      • Check condition of fire with R.
      • Advance toward the bon.
      • Remove the top lid of the kou-ro with 2h, place to R of bon on tatami.
      • Remove folded-paper-incense from the kou-ro, placing R heriuchi 2 mei.
      • Return lid, then open the second stack (2h, place to R).
      • Using the pliers, place mica square onto hiire (L supporting R wrist).
      • Using ring fingernail, gently press the mica chip.
      • Pick up the incense packet and give to L. R unfolds the bottom. R takes hashi → opens the top → opens the side → takes incense lengthwise. L folds it all back except for bottom, then places heriuchi geza temporarily (while R is still holding hashi).
      • Place incense on mica (L supporting wrist). Hashi back to tray.
      • Tuck the top flap back into the bottom flap of the incense packet, then return kamiza heriuchi.
    • Enjoy kou:
      • Shokyaku tests kou first. Hold in L palm with thumb up, R making a chimney. Breathe, exhale away from other guests. Just once!
      • Koro is passed heriuchi (not by hand). Koro is turned hidari-mawari, osaki-ni before imbibing. Everybody except hanto enjoys.
        • Note: Tou osaki-ni’s to the shokyaku, as they will enjoy last.
      • After enjoying kou themselves, tou stands and brings kou-ro to shokyaku geza without turning (as it’s already facing them).
      • Shokyaku imbibes, replaces to tray.
    • Meanwhile enjoying kou:
      • Shokyaku closes juu-kou-ro, then reopens the lid and places the incense packet in the top-most layer. Then, shokyaku scoots back to their usual position.
    • After shokyaku enjoys kou, tou asks to leave the incense burning (douzo o-kou wo so-no-mama ni).
      • Shokyaku advances to bon, turns migi-mawari, then returns back.
      • Hanto enters, places the bon in the tokonoma.
  • After placing the kou-bon in tokonoma, hanto brings in koicha dougu.
    • Enter with chawan, place okiawase with chaire.
    • Exit, reenter with kensui and place in same position as haiki earlier.
    • Exit from fumikomi like in kagetsu and sit next to tou.
  • Tou walks to temaeza and makes koicha.
    • Sorei etc as usual for koicha.
    • (Note: kobukusa is not used in all Shichijishiki, even for non-raku).
    • After chawan sorei (tou does not drink) and first guest drinks, hanto stands and sits in tou position to make te-watashi easier.
    • Tou notes:
      • Still ask about fukukagen, still turn to kyakutsuki.
      • Kyaku will not ask about tea, sweets.
    • After hanto drinks, shokyaku asks for chawan haiken as usual. Hanto brings it, but then returns to their original spot on return.
      • Note: Hanto does not view chawan.
    • Sankyaku returns bowl, no deai.
  • Koicha chawan returns to temaeza, everyone sorei.
  • Hanto stands immediately, brings in kazarigashi to shokyaku. Meanwhile, tou adds oyu and kosusui. Tou places chawan to the rear to make room for natsume.
  • Tou and hanto stand simultaneously, tou to original seat and hanto to temaeza.
    • (They brush sleeves at the fumikomi-datami).
  • Hanto makes usucha for the tou.
    • Take natsume from tana, place in front of chawan. Kiyome, place to kensui no kata.
    • Bring chawan forward, add oyu (again), empty immediately, and wipe.
    • When hanto takes chashaku:
      • Shokyaku kansha’s kazarigashi tray, then passes down the line.
      • (Everyone does this. No osaki-ni, as no one is actually eating).
      • Tou does the same. When hanto nearly finishes whisking, tou turns the tray and brings it to shokyaku on the way to take the chawan.
      • Tou drinks usucha as usual. No “oshoban itashimasu”.
        • Otemae chodai?
    • On first tou sip, hanto does irekae.
      • Chashaku to mizusashi with R
      • Chaire to tana with R
      • Natsume to mizusashi shomen with L
      • Chashaku to natsume with R
    • Tou returns the chawan (no deai).
    • Shokyaku asks douzo oshimai kudasai at the usual timing.
    • Then, shokyaku moves kazarigashi tray kamiza. Hanto closes temae as usual (honjimae).
  • Hanto closes mizusashi lid, shokyaku asks for chaire, chashaku, shifuku no haiken.
    • Kiyome, shokyaku takes dougu as usual. Leave hishaku on tana.
    • Haiken starts as soon as shokyaku returns. Hanto does the usual temae close (chawan, mizutsugi). Sankyaku returns the dougu without deai.
    • Hanto returns to take dougu. Everyone sorei.
    • As hanto stands with dougu, tou also follows (second).
  • Tou returns, followed by hanto. Both sit on fumikomi for okuri-rei. They stand and exit together.
    • Tou stands with L, hanto stands with R.
    • Tou exits first, so hanto steps onto adjacent mat, then follows tou.
  • Kyaku place fans out. Osaki-ni, exit holding fan. Kazarigashi is left out.
