From glenn, to get a thicker yokan e.g. Toraya’s (instead of Mizu-yokan):
Ingredients
- 300g sugar
- 300g water
- 300g anko
- 8g kanten
Procedure
- Bring everything to a boil, then leave it boiling for two minutes to evaporate some of the liquid.
- Pour into nagashikan.
