From glenn, to get a thicker yokan e.g. Toraya’s (instead of Mizu-yokan):

Ingredients

  • 300g sugar
  • 300g water
  • 300g anko
  • 8g kanten

Procedure

  • Bring everything to a boil, then leave it boiling for two minutes to evaporate some of the liquid.
  • Pour into nagashikan.
