Recipe

  • Make Uiro-Wrapped Balls using plant-based food coloring and shiro-an.
  • Shape into kaki as below.
  • Form leaves using Konashi, attaching by gently dabbing the top of the uiro with water.
    • Corners of leaf should point along the indents.

Tips

  • On shaping the leaf
    • Make the rectangle taller than needed at first, then push down with the chopsticks. This will make the leaves look fuller.
  • On shaping the kaki
    • Don’t make the hera indents too deep, otherwise it looks like Ume. Instead, pre-form the ball into a rough rounded square to get the shape, then do a single light hera pass on each edge.

Shaping the kaki

  1. Gently roll the ball on the X and Y axes (viewed from top-down) to make a tall rounded square.
    1. Make sure the exterior stays plump and round, not straight-sided like an actual square.
  2. Press down gently with the pad of your thumb to flatten.
  3. Using the blunt side of a hera, make 4 indents.

Shaping the leaf

  1. Flatten a small ball of konashi, then pinch the four corners.
  2. Press the rear of a chopstick into the center.
